Chickpeas, Tomato & Feta Salad

Tired of the usual brownbag lunch, try this recipe for Chickpeas & Feta SaladThe only reason that you are going to read this article is because you wanted to eat the image to the left, and because every day you have the same disappointed expression as this poor bastard to my left.  Why does he look so disappointed?  Because its another day of eating peanut butter and jelly sandwiches.  You don’t have to go through life treating lunch like a chore or getting fat eating out at restaurants that are killing you with tasteless food. Be the cool kid in the office with the brown bag that rocks.This little concoction is something that my wife and I created for lunch a couple of weeks ago.  Not only was it delicious, but it was filling, and left my colleagues envious of my little brown bag.

Ingredients:

1/4 cup chickpeas
1/2 cup quartered tomatoes
1/4 cup feta cheese
1 tsp. olive oil
1tsp dried oregano
1/8 tsp salt

Rinse and drain chickpeas, combine chickpeas, tomato, feta, olive oil, oregano, salt and pepper as needed. Typically my wife and I will prepare the ingredients the night before and combine the morning of the day we plan on eating it so that everything stays fresh and does not get mushy.  Hopefully you enjoy this fun break from the oh so critical world of architecture.
